Here’s my version of the famous parsi dish – salli par eedu or eggs on potato stick. The baked version looks like frittata and is fun to eat.
1 onion finely chopped
1 green bell pepper finely chopped
2 tomatoes, finely chopped
2 grated potatoes
turmeric – 1/2 tspn
chilli powder – 1 tspn
dhaniya jeera powder – 1/2 tspn
pavbhaji masala – 2 tspns
ginger garlic paste – 1 tspn
milk – 1tbspn
Water if needed
Saute the ginger garlic paste in oil in a pan on high heat. Add onions and cook till yellow. Add the bell pepper and tomatoes. Cook for two minutes. Add the spices and allow to cook till oil separates or tomatoes are soft and well blended. Add water if needed to cook till done.
Beat eggs with milk and keep aside. Add salt to taste.
Take a baking dish. Grease it with oil or butter. Arrange the grated potato in one layer. Crisp it in oven for 5 min till lightly done.
In the same dish arrange the cooked veggies. The mixture should cover the potato base. Add the egg mixture.
Cook at 200 c for 15 to 20 min till egg has risen or fluffy.
Serve warm with bread or toast.
Note: You can add cheese to it as well.
